MLF (Malolactic Fermentation):
Conducted after complete alcoholic fermentation.
Storage conditions:
The juice is fermented at 18–20°C in stainless steel tanks for 10–15 days. Fermentation is managed to preserve the fruit’s natural sweetness, then carefully balanced to achieve a harmonious interplay of acidity and sweetness.
Aging: in a stainless steel tank.

Recommendations for serving and combining with products:
Serve lightly chilled at 12–14°C to let its floral, honeyed aromas open up. This semi-sweet quince wine pairs beautifully with aged cheeses like Manchego, as well as creamy and blue varieties. It complements poultry and white meats — especially chicken prepared with fruit or mild spices — and lightly spiced Caucasian dishes. It also makes an elegant finish to fruit tarts, nut pastries, and honey desserts, or a fragrant aperitif on its own.
